Country: Australia. Vintage: 2014. Tasting Notes: Medium to full bodied wine that has plenty of true Cabernet Sauvignon characteristics such as blackberries, blackcurrants, cassis and spice. Rich palate shares similar flavours to the aromas and finishes with silky soft tannins. Cabernet makes an excellent accompaniment to red meat, especially lamb and hard cheeses. 2) Grant Burge Benchmark Shiraz

Country: Australia. Vintage: 2014. Tasting Notes: Full bodied wine with concentrated aromas and flavours of cherries, black pepper and spice. Palate perfectly balanced by complementary fruit flavours and savoury spiced oak characters. Shiraz is perfectly suited to char-grilled red meat and hearty Italian dishes. Varietal: Shiraz

3) Domaine De Menard Rouge

Country: France. Vintage: 2015. Varietal: Merlot. Tasting Notes: The Domaine de Menard Merlot-Cabernet Sauvignon is a particularly fleshy wine and generous. It presents a fruity nose, with strawberry and blackcurrant aromas mingling with spicy notes. On the palate the wine is full bodied, with silky tannins. An easy-drinking wine.

4) McWilliam's Markview Shiraz

Country: Australia. Varietal: Shiraz Tasting notes: Vibrant rouge with red hues. Aromas of plum, blackcurrants and dark cherry fruit dominate the nose with hints of black pepper and spice. Sweet toasty oak adds complexity to the aroma. Palate is soft and full bodied, flavours of plum, black berry and cherry are supported by subtle fine tannins, and toasty oak provides excellent length to the palate.

5) Baron Phillipe De Rothschild Cabernet Sauvignon PAYS D'OC

Country: France. Vintage: 2015 Tasting notes: Typical aromas of blackcurrant bud and cherry liqueur. On the palate it displays an attractive structure of stylish tannins accompanied by rich and generous spice and black cherry flavours with a touch of liquorice and menthol.

6) Baron Phillipe De Rothschild Merlot PAYS D'OC

Country: France. Vintage: 2014. Tasting notes: Red fruit, cherry and raspberry aromas enhanced by touches of spice. Round on the palate, flavours of morello cherry and blackberry with a hint of liquorice. The smooth finish, long and fresh, gives this very pleasant Merlot great character.

Choice of white wine:

1) Grant Burge Benchmark Chardonnay

Country: Australia. Vintage: 2014. Tasting Notes: This vintage is a classic example of Benchmark Chardonnay. Lemon, green in colour with fresh aromas of citrus fruit, honey and subtle stone fruits. The palate is soft and creamy with honeydew melon and nuances of sweet spiced cream along with a fine, natural acidity. The fresh citrus flavours all have great length, with good texture on the palate from the time spent on lees. Best suited to creamy fish dishes, chicken salads or just on its own. Varietal: Chardonnay

2) Grant Burge Benchmark Semillion Sauvignon Blanc

Pale straw in colour, this vibrant and fresh style of wine has been created using old-vine Barossa Semillon and cool climate Eden Valley Sauvignon Blanc. Richly perfumed, with intense aromas and flavours of citrus from the Semillon and tropical fruits and herbaceous characters from the Sauvignon Blanc, has resulted in a flavoursome, easy to drink refreshing style of wine. This food friendly blend of wine goes well with Thai style dishes.

3) D'Arenberg The Stump Jump Lightly Wooded Chardonnay

Very aromatic to start, lifted citrus blossom mix with white peaches and nectarines. Fresh and zesty on the palate, the oak lends support and gives a lovely creamy mouthfeel with texture and spice. This little number is great on its own and also goes down a treat with fresh fish, crunchy salads or a roast chook.

4) D'Arenberg The Stump Jump Sauvignon Blanc

The Stump Jump Sauvignon Blanc is fresh and aromatic, just crying out for a sunny afternoon. The nose is full of flowers, passion-fruit and exotic tropical fruit like guava, mangoes and lychees. The palate is lively with zippy acid giving raciness amongst the citrus and peaches. Finishing crisp, long and lingering.

5) Domaine De Menard Colombard Sauvignon Blanc

Country: France. Vintage: 2015. Varietal: Sauvignon Blanc. Tasting notes: This Colombard-Sauvignon is a lively and elegant dry white wine. The nose is precise and very aromatic. Its fruity character is marked by the tropical fruit and pineapple of the Colombard, and strengthened by the aromas of grapefruit brought by the Sauvignon. Round and ample on the palate, with a long finish.

Country: Italy. Varietal: Moscato bianco. Tasting Notes: Straw-yellow color, clear and brilliant. Very intense and clean aromas of rose, peach, white fruit, apricot, figs and orange flowers. Gentle in the mouth but not boring, properly fresh, wide-ranging and of great elegance.
